									<p>If you know my backstory, you&#8217;ll know I was addicted to junk food and practically lived on it.  After getting sick, I cleaned up my diet and my life and haven&#8217;t looked back.  I no longer rely on food to make me feel better (which it only ever did in a temporary way), and instead, rely on good, whole foods to nourish my body and help my brain.  My gut is grateful and my brain no longer feel like its on fire.  I can think clearly and no longer operate in a cloud of fog like I used to.</p><p>So, here&#8217;s what we can expect when we ditch the processed crap altogether!  Check out the following graphic for a summary.</p>								</div>

Break up with your relationship to junk food.  If I can, trust me, anyone can <img src="https://s.w.org/images/core/emoji/15.0.3/72x72/1f642.png" alt="πŸ™‚" class="wp-smiley" style="height: 1em; max-height: 1em;" /> Because processed food is designed to be addictive &#8211; this keeps us coming back for more .  So the more we eat, the more we want.  I remember saying I&#8217;d not eat McDonald&#8217;s again and then find myself in the drive through again.  It was almost like I was taken over by some crazy addict waiting for my giant slurpie! That crap is addictive! When we stop eating it, we no longer want it.  </p><p>And a side bonus when we ditch the additives in the addictive processed foods, normal food (which is what we should be eating), becomes more appealing. It tastes better and we get added side benefits of feeling fuller, access more nutrients, which both then have a knock-on effect for our gut health and brain health.  These addictive chemicals also create inflammation in the body, not to mention the weight gain.  When I stopped eating them, the weight fell off.</p>								</div>

									<p>Go figure!  Whole foods are not designed to cause inflammation in the body.  We certainly don&#8217;t eat an apple and start to swell up.  That &#8216;swelling up&#8217; is often fluid retention or a reaction in our body.  I can actually feel it gather in my body because I&#8217;m so sensitive to fake foods now.  Real food doesn&#8217;t cause that.</p><p>If we continue to eat inflammatory foods, our body struggles to achieve balance.  I&#8217;ve been there so I know. Through only consuming whole foods (ok, I do sneak the odd potato chip here and there and eat out occasionally), my body is not constantly trying to achieve homeostasis.  I&#8217;m not being completely bombarded by chemicals.  My body can handle small amounts of processed foods but this is very rare now. </p>								</div>

									<p>Eating whole foods could improve how we look <img src="https://s.w.org/images/core/emoji/15.0.3/72x72/1f642.png" alt="πŸ™‚" class="wp-smiley" style="height: 1em; max-height: 1em;" />  Well this might not equate to a nose job or getting rid of deep set frown marks, but eating whole foods can certainly make our skin look brighter and more vibrant.</p><p>Because we have less inflammation in the body, and we&#8217;re getting the nutrients, minerals and vitamins we need from whole foods, we look better.</p><p>If our gut microbiome is disrupted, this is going to show on our skin.  The skin on my hands used to be covered in eczema.  Check out these before and after pics of my hands. The skin on my face has also completely cleared up.  If you have problems with your skin, look to what you&#8217;re consuming first and go from there.</p>								</div>

									<p>What is happening on the outside is just a reflection of what&#8217;s going on on the inside.  Our skin is a reflection of our health.  Dark circles will appear if we don&#8217;t get enough sleep.  We might get patches on our skin if we are sensitive to additives in food (maybe because they are toxic to our body).  Or our hair may fall out, lose it&#8217;s lustre, and get dry.  These can all be the result of environmental toxins.  Eat whole foods and see if the same problems occur.  My bet is they won&#8217;t but I can only base this on my own experience.</p>								</div>

									<p>I think this is pretty obvious so I won&#8217;t go into much detail here other than if you don&#8217;t want to rely on the current and future health system, get healthy now.  If we continue down the road of chemical laden foods that disrupt our gut and subsequent brain health, then we&#8217;re heading down the medical route.</p><p>If the past 5 years are anything to go by, people are starting to move away from the medical model of treatment and are moving towards a more holistic approach to healthcare &#8211; me included!  I have zero faith in the current system so I do everything to stay as healthy as I possibly can &#8211; it&#8217;s also a great way to rebel against the system too <img src="https://s.w.org/images/core/emoji/15.0.3/72x72/1f642.png" alt="πŸ™‚" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>								</div>

I don&#8217;t know any other way to say it.  We can no longer rely on regulatory agencies set up to make sure our water is safe and our food is free of cancer-causing and disease-causing crap. 									<p>Every morning, I take 10mls of a Dandelion tincture (leaf and root). A tincture is like a concentrated mix of one or more herbs combined in a bottle. You can take it using a dropper or a little cup, or put it into a small amount of water. One of the main reasons I tried dandelion was for my liver health. After years of drinking  alcohol I thought my liver could do with a good detox and dandelion seemed to be a good start.</p><p>Dandelions have long been used in traditional medicine to support liver health. They are believed to promote liver detoxification and improve liver function. 									<p>Dandelions are awesome for giving our immune system a boost. They’re loaded with vitamins A, C, and E, which help keep our immune system strong. Vitamin C, in particular, is great for helping our body produce white blood cells that fight off infections.</p><p>Dandelions also have a ton of antioxidants, which protect our cells from damage and reduce inflammation, helping our immune system work better. <p>Have you ever seen media images of people spraying pesticide on crops? What are they wearing? Why are they wearing hazmat suits? Because what they are spraying on our food kills shi*. If that can kill little bugs and insects, can it kill us? Hmmmmm??? If I can buy certified organic, I will. It’s for this reason alone.</p>
<p>After doing heavy research into gut health, what can harm the gut, and then not wanting to cause more damage to the gut, making certified organic produce a top priority seemed like a no brainer for me. I basically just do the best I can and that’s all we can do because we are all in different situations.</p>
<p>I stumbled across the Dirty Dozen and Clean 15 by sheer accident when researching Coeliac Disease and why it was increasing. My interest in gut issues led me down a path of what we put in our mouths and how this must have an effect on our gut. These lists can be found through basic research and are also available on many social media and news accounts.</p>

<p>Let’s start with the Dirty Dozen. This list is compiled of 12 fruits and vegetables. Samples are taken from around 35,000 fruits and vegetables to test how much chemical residue is left on each piece of produce. The produce containing the most pesticide residue, end up on the Dirty Dozen list.</p>

<p>If we can buy these items organic, or better still, certified organic, we have a far better chance of reducing the amount of pesticide residue we consume. While it’s important to wash all our fruit and vegetables every time before we consume or cook them regardless of where we buy them, if we can buy these 12 items certified organic, we can reduce the chemical load on the body.</p>

<p>Our choices either feed disease or prevent it. It’s hard to put a price on good health so for that fact alone, I don’t. It can cost more to buy certified organic but buying seasonal, and shopping around, can help keep costs down. Nearly all my money goes towards my health and well-being. Long gone are the days of wasting money on unnecessary items. So what I don’t waste on crap and useless items now, I put into my food.</p>

<h2 class="wp-block-heading">What goes on our food, goes in us</h2>



<p>Have you ever seen media images of people spraying pesticides on crops? What are they wearing? Why are they wearing hazmat suits? Because what they are spraying on our food kills shi*. If that can kill little bugs and insects, can it kill us? Hmmmmm??? If I can buy certified organic, I will. It&#8217;s for this reason alone.</p>



<p>After doing heavy research into gut health, what can harm the gut, and then not wanting to cause more damage to the gut, making certified organic produce a top priority seemed like a no brainer for me. I basically just do the best I can and that&#8217;s all we can do because we are all in different situations.</p>



<p>I stumbled across the Dirty Dozen and Clean 15 by sheer accident when researching Coeliac Disease and why it was increasing.</p>

<h2 class="wp-block-heading">So, What is the Dirty Dozen?</h2>



<p>Let&#8217;s start with the Dirty Dozen. This list is compiled of 12 fruits and vegetables. Samples are taken from around 35,000 fruits and vegetables to test how much chemical residue is left on each piece of produce. The produce containing the most pesticide residue, end up on the Dirty Dozen list.</p>

<p>If we can buy these items organic, or better still, certified organic, we have a far better chance of reducing the amount of pesticide residue we consume. While it&#8217;s important to wash our fruit and vegetables every time before we consume or cook them, if we can buy these 12 items certified organic, we can reduce the chemical load on the body.</p>

<p>The Clean 15 is just the opposite of the Dirty Dozen. The list is comprised of the top 15 fruits and vegetables that contain the LEAST amount of residue from pesticides and herbicides.</p>

<h2 class="wp-block-heading">The Cost &#8211; Prevention is better than cure</h2>



<p>It&#8217;s hard to put a price on good health so for that fact alone, I don&#8217;t. Nearly all my money goes towards my health and well-being. Long gone are the days of wasting money on unnecessary items. So what I don&#8217;t waste on crap and useless items now, I put into my food.</p>



<p>The box of fruit and veggies below are all certified organic that I buy locally. This lot cost $60 NZD. They are seasonal and I never know what&#8217;s coming, but there is a good range and I know it&#8217;s not going to break my gut wall. Buying produce like this, also ensures that I don&#8217;t waste anything. It forces me to get creative and stick to my meal plans. I can&#8217;t stand chucking out food or food wastage, so my only option is to eat or cook them.</p>

They found that although our diet contributes to alterations in our gut microbiome, environmental chemicals in our food are often overlooked.</p>



<p>It&#8217;s hard to think that small amounts of chemical residue would have an effect on our gut. But if all those small amounts add up over time, it&#8217;s no surprise that our gut wall could weaken over time.</p>

<p>No one likes a punch in the guts unless it&#8217;s going to help the immune system.  They contain a thing called &#8216;selenium&#8217; which is an antioxidant that can lower stress in the body.  This then helps lower inflammation helping our immune system to do the job it&#8217;s designed to do.  Other benefits include helping to repair our DNA and endocrine system.  One hard-boiled egg gives around 27% of the daily recommended amount of selenium.  </p>

<p>If you&#8217;re going to eat kale, get the certified organic version as the other can be covered in nasty pesticides or herbicides.  Kale ranks highly on the &#8216;dirty dozen&#8217; list which is compiled every year examining residue left on fruits and vegetables.  Opt for certified organic if you&#8217;re eating kale.</p>

<p>Kale is not only high in Vitamin K, it also contains a high amount of Vitamin C.  Because of its high nutritional value it&#8217;s often referred to as a superfood and one of the healthiest vegetables around.  That&#8217;s only if it&#8217;s not covered in chemicals ;p</p>



<h2 class="wp-block-heading">Turnip greens are &#8216;mean&#8217; (but I&#8217;ve never tried them)</h2>

<p>I haven&#8217;t tried these guys out but hey, there&#8217;s always a first time for everything right!  Although I can&#8217;t comment on their taste or even how to cook them, I can break down the info on their nutritional value and why they rank so high in vitamin K.</p>



<p>Aside from being high in vitamin C &amp; A, magnesium and phosphorus, turnip greens are also high in calcium.  Calcium is needed for strong bones.  If you&#8217;re not keen on eating dairy, it&#8217;s good to know we can get calcium from other sources.  Basically, we can get calcium from sources other than milk.  While I&#8217;ve not tried turnip greens myself, I may just give them a go if I can find a meal that fits them in <img src="https://s.w.org/images/core/emoji/15.0.3/72x72/1f609.png" alt="πŸ˜‰" class="wp-smiley" style="height: 1em; max-height: 1em;" /></p>



<h2 class="wp-block-heading">make the apple cider vinegar our friend</h2>

<p>When I first started using apple cider vinegar, I took it as a shot.  It wasn&#8217;t pleasant.  I&#8217;d heard it was good for weight loss, and general health and well-being.  But it tasted like crap on it&#8217;s own and felt more like a punishment than a reward for good health.</p>



<p>Times have changed and I now love it rather than loathing it.  Putting just a capful or two onto a salad is an easy way to include it in our diet.  Alternatively, adding together apple cider vinegar, mustard, olive oil and maple syrup, makes a nice homemade salad dressing that&#8217;s not too tart.</p>

<p>Broccoli has many health benefits and is easy to add to meals.  In terms of immune support, aside from being packed full of Vitamin C, B Vitamins, Zinc, Magnesium and more, broccoli contains a polyphenol called Quercetin. </p>

<p>A lot of these &#8216;quercetin&#8217; containing foods also appear in the Dirty Dozen list for 2021.  Be sure to buy certified organic produce where possible as the popular weed killer that contains &#8216;Glyphosate&#8217; kills weeds so it&#8217;s more than likely it kills off our gut microbiome.  Think about it.  They don&#8217;t wear hazard suits when spraying it around for no good reason.  </p>

<p>Spinach has a thing in it called &#8216;beta carotene&#8217;.  Beta Carotene is the red, yellow and orange pigment colour seen in things like carrots.  Because spinach is high in a thing called chlorophyll, the pigment is hidden.  Beta Carotene can help balance the gut if it is disrupted. <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6582396/" target="_blank" rel="noreferrer noopener"> </a></p>

<p>Although I&#8217;m a fan of supplements and do supplement on top of my already good diet, I still like to get as many nutrients as I can from the food I eat.  It&#8217;s also a lot easier to just eat right than take a bunch of other things.  My opinion only of course.  Everyone is different so we just have to do what we think is right for us.</p>



<p>Be sure to buy certified organic spinach as well as it ranks as <strong>number 2</strong> on the Dirty Dozen list for 2021.</p>

<p>Vitamin K helps our immune system do the work it&#8217;s supposed to do, and is an essential vitamin for gut health, heart health and strong bones. There are a bunch of foods we can add to our diet to make sure we&#8217;re getting enough. While some items may not be to everyone&#8217;s taste, giving different foods a go and persevering with them, can help us end up liking foods we may never think we&#8217;d tolerate.  I guess we won&#8217;t know if we don&#8217;t try eh!</p>
