When I was first diagnosed with Coeliac Disease (CD), I had no idea really what vitamins, minerals and nutrients were essential for my health apart from the obvious ones like Vitamin C. I had to learn on the fly as I tried to heal my gut which took me hours and hours of research. I found that the best way for me to remember what foods contained what was to create infographics on the information so I could then refer back to it when needed. Everything I learned, I posted on Pinterest and gradually over time, my account grew.
On a diagnosis of CD, it can be a confusing and scary time, especially if you develop it spontaneously like me. Trying to work out what to eat is super confusing which is why I chose to opt for mainly whole foods e.g. things that are packaged or processed. The good thing about a banana is that you don’t have to read the label to find out what’s in it!!!
Individuals with CD often lack certain vitamins because the ongoing damage to the small intestine means that a lot of nutrients aren’t absorbed. This can lead to nutritional deficiencies which is why it’s good to have vitamin levels tested so we know what we’re lacking in which helps us know what to correct.
For example, when getting my blood results back one time, I was lacking in Vitamin A. I researched what I needed to get these levels back up and found that certain foods contained higher amounts than others. I picked which ones I like to eat or continue eating, and made a graphic about it. If you follow my work on Pinterest, you’ll be familiar with my video infographics. Compiling what I learned
So after doing hours of research and compiling what I had learned into infographics, I decided to put all of this knowledge into an eBook. This is to make it easily accessible for myself, but also for others.
As I mentioned earlier, it can be super overwhelming trying to work out what your body needs and what foods to consume when getting a sudden diagnosis of CD.
